Our Kamut® Brand khorasan wheat is an ancient grain and a variety of khorasan wheat. Kamut is a great grain that is high in protein and other nutrients. It can be ground into flour and used to make breads, pastas, and cookies. It is similar to durum wheat in its flour content, but it contains less gluten than regular wheat flour. This ancient grain is different from traditional wheat bacause it's easier to digest, says registered dietitian Andrea Mathis, R.D. Unlike conventional wheat, it's also always organically grown and never hybridized or genetically modified.
The first Khorasan wheat seeds to get planted in America came from farmer Earl Dedan, who got 36 samples of the grain in a chance encounter in Portugal in 1949. His father, Rube Dedan, planted the seeds at his farm in Fort Benton, Montana, and for over six years the crop grew larger until 1,500 bushels were sown.
